Beautifully golden orange fruits with velvety soft skin, apricots are one of the first signs of summer. Its flavor is sweet and almost musky, with a faint tartness between a peach and a plum which becomes more pronounced when dried. Apricots are full of beta-carotene and fiber. Chewy and packed with flavor, they make a good snack as is. Add it to cereal, pancakes, fruit and nut bars, and green salads. You can also give a Middle Eastern flavor to chicken and vegetable stews with the addition of diced dried apricots.
