Textured soy protein is a vegetarian's staple food and perfect for dishes where you need the texture of meat. It has a chewy texture that soaks up the flavour of the sauce around it. Particularly suited to strong flavoured dishes like sweet and sour or ginger. For extra flavour, rehydrate the soy in a marinade for at least an hour before cooking. The longer you leave them the more flavorful they will be.
