粗糖（そとう）とは、さとうきびの絞り汁から、不純物を取り除いた後、液体を分離し残った結晶のことで低精製糖です。さとうきびのビタミンやミネラルが含まれており、自然な甘さの砂糖です。コクと旨味をお料理に与えてくれます。
This is raw sugar, which is made by extracting juice from sugarcane and boiling it down until nearly all the moisture evaporates. The syrup is then poured into molds and left to cool, at which point you can chisel off a chunk for whatever you need. Raw sugar retains all the mineral and acid impurities of the sap it came from, which accounts for its unique and varied flavor.
